A stranger in a Baltimore park swore this was the city’s best bowl, so I headed to Federal Hill to test that claim with Ryan, the man behind the recipe at Liv's Tavern. The presentation was instantly impressive, featuring a vibrant orange hue that hit that perfect classic shade, neither too light nor too dark. Topped with generous lump crab and a dusting of Old Bay, it looked as good as it smelled. The texture was velvety and perfectly thick without feeling heavy or cloying. It’s the kind of visual promise that makes you want to dive in immediately.
Ryan revealed his secret weapon: cooking onions and parsnips in dry sherry to give the base a sharp, sophisticated bite. That technique really elevated the sweet, briny flavor of the locally sourced crab. We debated the green garnish—chives, hopefully not cilantro—but agreed on the delicious result. It wasn’t an overwhelming punch of pure crab meat, which Ryan argued is better left for a straight crab cake, allowing the other flavors to shine through in harmony. The balance was spot on.
